What is food pairing? Is food pairing important? 

What is food pairing? 
Where do I find flavour? Well, to simply, flavour = aroma + taste. Nothing magical, it is really that simple. Food pairing is identifying the right key ingredients which go well with another ingredient. Some examples would be, parmesan + pasta, eggplant + tomato, saffron + risotto etc. There are hundreds and thousands of ingredients to match from and some of it will be able to amuse your taste buds. 

Food pairing is simple and I believe that there are many affinities yet to be discovered. Every year, many new ingredients discovered. Therefore, it is endless to stop pairing flavours. 

It is important to identify the component of the food before pairing flavours. Understand how each ingredients work and the profile of it whether it is sweet, bitterness, savoury etc. After you have mastered your brain to understand and memorise the taste and aroma of the food. You would be the master of food pairing and be a better cook.

There are times where I will be sitting on the bus and wonder how amazing carbonara + truffle + kombu would be. 

Is food pairing important? 
Food pairing is essential when you are ready to stop cooking your classic grandma's recipes such as roasted chicken + mirepoix and venture into something unique. 

Examples of some food pairings which managed to impress me
avocado + chiles + onions + tomatoes + cactus + lime juices + cilantro
avocado + crab + tomato + grapefruit
pork + curry + garlic + yoghurt
