Tough cuts such as briskets would be long hours of braising to break its fiber to achieve it's deluxe tenderness. Personally I am deeply in love with sirloin cut, simple brine, sous vide, sear it off with butter and garnish it with kosher salt and pepper is simply perfect. Trust me people will go crazy for it too.
